Easy peanut sauce

I love peanut sauce. When I go for Thai food I usually end up ordering an extra two or three sides of peanut sauce. It’s one of those flavours that I just can’t get enough of. Some people are like this with Swiss Chalet sauce, some people are like this with plum sauce, I’m like this with peanut sauce. I think part of it was that I so rarely got to have Thai food that it was a real treat.

One day it hit me – I don’t need to wait for the rare Thai night out, I can make this at home! So I poured over recipes and found that it’s actually really easy. Now I make it fairly regularly, because it’s super-easy and sooooooo delish. Seriously, it goes with rice, spicy noodles, pork, chicken, beef – as a dip for pita crisps…

I don’t know why I never introduced it to the boys, but tonight I made rice bowls with ginger soy pork, but the dish was a bit bland. I fixed it with a side of peanut sauce, and the boys were licking their bowls. In fact, I asked my younger son to hold the rice bowl so I could take a picture of it, but he just couldn’t stop eating the sauce with his fingers.

What you need:

– 1/2 cup peanut butter – (I like crunchy but if you’re one of those ‘smooth’ people, that’ll work)
– 2 tablespoons soy sauce
– 2 tablespoons brown sugar
– 1/3 cup water

What you do:

Over medium heat, melt the peanut butter. When it’s softened, mix in the soy sauce and turn the heat down. Toss in the brown sugar and water and blend it all together. You can add the water by bits and stir until you get the desired texture. I like my sauces thick, but if you like your peanut sauce thinner, you need more water.

Serve as a side – if your kids don’t insist on eating it with their fingers before dinner is on the table.
